Still Strength Tequila is bottled at the same alcohol level at which it leaves the still, without being diluted with water during the bottling process. This is around 55% alcohol by volume or 110 proof. This reflects the purest, most concentrated form of tequila, with more intense flavors and aromas. You will also see bottles referred to as High Proof Tequila, which means they are bottled at a higher proof than the typical 80 proof. Anything above 80 proof can be considered high proof. Ultimately, high proof has been diluted. For the most authentic taste of what a distiller wants their tequila to represent, go for the Still Strength. The highest proof a tequila can legally be and still be labeled tequila is 110 proof. This regulation is established by the Mexican NOM (Norma Oficial Mexicana) and the CRT (Consejo Regulador del Tequila). Tequila can be made above 110 proof, but cannot be called tequila.
